I am a pastry chef who is obsessed with all things bread. I have been a career baker for over 10 years and attended college where I earned my baking degree and a business degree.  I really enjoy reading bread books, and have recently begun educating myself on local grains and the grain economy.  I am very interested in farmer-Miller-baker relationships and hope to begin using only locally sourced flours, even in large-scale restaurant pastry kitchens.  I bake sourdough from home in my free time and hope to use my own education as a tool to help educate others.
